Do you like Reuben sandwiches? If you do, you will love this easy and delicious casserole. It has the makings of a Reuben sandwich, corned beef, sauerkraut, swiss cheese, but you bake it.
Ingredients
Package Bob Evans Original Mashed Potatoes (24 oz)
2 large eggs
1/4 cup milk
1/3 pound thickly sliced corned beef cut into 1/2 inch pieces (available at grocery deli)
1 can sauerkraut, drained (4 oz)
1 tablespoon spicy brown mustard
1 cup shredded Swiss cheese, divided
Directions
Preheat oven to 400F. In large bowl, stir together potatoes, eggs and milk until well combined. Stir in corned beef, sauerkraut and mustard. Set aside 2 tablespoons of cheese. Stir in remaining cheese into potato mixture. Pour into a greased 8 x 8 inch oval baking pan. Top with 2 tablespoons cheese. Bake 15-20 minutes or until top is golden. Serve with a tossed salad. Yep, it's made from lettuce! I had to do a double take when I saw this advertisement for PETA. Quite creative. First Lady Gaga and her dress made from raw meat and now a lettuce dress from PETA. What's next bread, lol? This advertisement is for PETA's vegetarian and vegan starter kits. PETA is encouraging people to go vegan.Whoever created the dress should head over to Project Runway and sign up for the next season. It's adorable.

This is probably one of the saddest post that I've ever written. My neighbor's 13 year old daughter committed suicide Thursday night. They found her around 3:00 am. I received a visit from another neighbor when I got home from work Friday evening. She was visiting to let me know of the tragedy, and to figure out how we could come together as a community to help this family. That's the type of neighborhood that I live in. We look out for each other regularly, and help each other out in time of need.
As we were talking, she stated that the parents hadn't seen it coming. The child was being bullied, but they didn't see it as a big deal. In their mind, she wasn't being bullied anymore than anyone else. My immediate thought was, here we are another child being bullied, nobody does anything about it, and they end their life. She was a beautiful little girl. So much to live for, but in her mind she had nothing to live for.
I've sat for the past day wondering how her parents could possibly find the strength to deal with this tragedy. I wondered how they could not take bullying seriously, and chalk it up as her not being bullied anymore than anyone else when it is such a serious problem. I thought about the guilt that they must be feeling right now. So many things have crossed my mind. I wondered what I would say to them when I see them. I wondered how they could continue to live in a home that was so lovingly built 3 years ago to one that would now hold a memory that would be unbearable. How does life go on after you loose a child in any manner, especially to suicide.
What's happening in the world today with our youth? Why do kids think it's acceptable to torture another person? Why are we so accepting of bullying, and so willing to chalk it up as kids being kids? Most importantly, what's happening to our parenting skills? I guarantee children aren't just acting out in school, they're mishaving at home too. Behavior problems start at home. To single out another person and torture them is beyond my comprehension.
My daughter was bullied in school, and I'm here to tell you that it was not acceptable to me. I took action. I let the school and the parents of the girls involved know that there would be hell to be paid if it continued with my child. At that point there was two things that you didn't mess with 1) My daughter and 2) My money. I labored for 8 hours to bring my daughter into the world. She was an investment, you see I invested all the love, time and money that I had into my daughter. She became my life and my most prized possession. She still is, I've just added to my portfolio now there's my grandson. I told the other parents that if they weren't investing in their child, that wasn't my problem, and they weren't going to make it my daughter's either.
As my readers know, I have been writing about bullying for some time. You see, it has an effect on you for the rest of your life. You just don't get over it as some people think you should do. It affects your self-esteem and self-worth. You start wondering what's wrong with you and why you're being singled out. Children don't understand that the problem really lies with the kids who are doing the bullying. As children you believe what the other person is saying about you, which is why it is so important for the parents of the child being bullied to counteract what's happening. Children today have no respect for authority, their peers or themselves. They think it's okay to just say or do whatever they please. I would venture to say they have no respect for their parents either.
Wake up America, this is a serious problem in this country. As I'm writing this article, CNN just reported that Kate Middleton who will soon be marrying Prince William is getting involved in a Charity who helps children who have been bullied. She was a victim. Her parents pulled her out of the school, they weren't having it either. I wonder what her bullies think of her now, lol. My daughter's bullies are now living a life of hell. One has 4 children with the babies daddy in prison and the other has 2 children with the father nowhere in sight. My daughter has a great husband, handsome son, beautiful home, and she's working on her Ph.D. She's happy.What's really funny is both of these young ladies now want to be her friend. They sent her a request on Facebook. She hit the delete button.
I pray that this family finds peace and the strength that they need to move through this difficult time. No parent should have to lay their child to rest. I wonder how this young girl's bullies feel this morning. Everyone's life has been forever changed. They will remind in my prayers.
It's National Potato Chip Day! Yep, March 14 is the day that American indulges in their favorite bag of chips and feels no guilt. I love chips, so I love this day. I confess, chips are my weakness. I haven't met a chip yet that I didn't like. My favorite store brought dip is Heluva Good French Onion, but I have a yummy homemade dip that is much better.I'll take it either way. My Xavier is a chip off the old block, he loves to eat chips and dip with Mama.Here's Xavier helping me make dip for our chips awhile back. It's amazing how much he has grown since our last dip making session. No more Nip Nip or Pull Ups.
I love Martins and Grandma Utz chips. If they are not available good ole Lays or Utz will do.If they're thin, crunchy, and flavorable you won't get a complaint from me. Did you know that potato chips were first created as a joke? The history behind these delectable artery clogging goodness is that they were invented in 1853 by Native American George Crum. Mr. Crum was a chef at a resort in Saratoga Springs, New York. A dinner guest ordered french fries, but complained that the fries were too thick and sent the order back. Well we all know that chefs don't like their dishes returned. Mr. Crum decided to get even by producing fries that were too thin and crispy to stick to the dinner guest's fork. It backfired, the guest loved the potato slices. The rest is history, the slices became a hit and known today as potato chips.
I don't know exactly when I fell in love with these potato slices. According to the width of my belly, I've been loving them for many years. I've given up many things over the course of the years, but I refuse to give up my chips. 1 pkg. Hillshire Farm Smoked Sausage, Beef Sausage or Turkey Sausage, whatever your preference
1 bag (20 ounces) refrigerated shredded hash brown potatoes
2 cups (8 ounces) shredded Cheddar cheese
1 cup sour cream
1 medium onion, chopped
¼ cup butter or margarine, melted
¼ teaspoon ground black pepper
Directions:
Preheat oven to 350°F. Lightly spray a 13 x 9-inch baking pan with non-stick cooking spray, I use PAM. The recipe actually calls for the sausage to be cut into cubes, I slice my sausage. Combine all ingredients in a large bowl. Spread mixture evenly in prepared pan. Bake 40-45 minutes or until lightly browned. Let stand 5 minutes before serving. Add fresh fruit and toast to the menu. Quick, easy and delicious.

I can't wait for the new season of Dancing With The Stars to start March 21. I said I was going to boycott the show after Bristol Palin beat out Brandy last season, but all is forgiven. When the lineup came out last week, I knew that I couldn't resist. The new cast includes Kirstie Alley from Cheers, Kendra Wilkinson from the reality show Kendra, talkshow host Wendy Williams and the Karate Kid Ralph Maccio. Sugar Ray Leonard, rapper Romeo, and wrestler Chris Jericho will also compete. I love me some Sugar Ray Leonard. I used to have dreams about that man when he was boxing.
I also like Kirstie Alley. I loved her when she was on Cheers and the in movie Madhouse. That movie cracks me up. I can also relate to her weight lose struggles although at times I've seen pictures of her when she was at her heaviest and I almost didn't recognize her. I hope and pray that I never reach that state. Through it all, she remains one of my favorite actresses.
I hope this season America votes for the best dancers rather than voting based on their political views. The show is very entertaining, but when it becomes just downright unjust, it leaves a bad taste in my mouth. Yep, I'm talking about Bristol Palin. On the dance floor, Brandy made a meal out of Bristol Palin and there's no way she should have landed in the final three. In the end America proved that they are just people. They put her in her place, last.

I've always been able to find cups, plates, napkins, utensils and table cloths to compliment my themed party supplies whenever I host a party or family gathering.Buying all themed items can get expensive, so I get creative and add complimentarily items from the Dollar Store. Yep, I sure do. I consider myself to be a quality person, but this momma works hard for the money and I don't just throw mine out the door. So I'm always looking for a bargain.
You can also find good deals on wine glasses, picture frames, gift wrap or gift bags, water glasses, coffee mugs and holiday or seasonal decorations. I'm a big craft person, so I can find leaves, berries, or other greenery there too for my door wreaths. This past Christmas, I stocked up on items for stocking stuffers.I found flash cards, game cards, candy canes, sidewalk chalk, and the cutest Winnie the Pooh pastel crayons for Xavier's stocking. He was pleased with his treasures.
Big Lots is another store that I love. I've found great gifts for baby shower prizes there as well as wall art, lamp shades and too many other items to name. If you're a bargain shopper, head to your local Dollar Store and get your hunt on. I'm sure you'll find a bargain or two as well.

I've never given Xavier, who's 3, cold cereal for breakfast, but it has crossed my mind. It looks like Kix may be the cereal that I try. It has less sugar, and could excite my grandson to want to eat it. Right now if I don't fix pancakes for him, I give him oatmeal. He loves both with an apple slice. A piece of bacon or sausage link is a treat. Occassionally, I do allow him to eat a butternut butter and jelly sandwhich with a glass of milk when he's visiting too.What do you feed your child for breakfast? I'm looking for ideas, I may take you up on it.
As my readers know, I'm not a fan of children being in beauty pageants. I've watched several episodes of Toddlers and Tiaras and quite frankly found it appalling. I have a problem with parents spray painting tans on children, making them up to look like painted dolls, and than claiming they're doing it all for the child.. Do I have stupid tattooed on my forehead? If you can find the tattoo, I'll accept that it's all being done for their daughter.
Anyway, I came across this video with Tom Hanks and his take on parents and the Toddlers and Tiaras show while watching Jimmy Kimmel. Tom Hanks is one of my favorite actors, so watching his take on pageants just made my day. He is brilliant in the video. Also, the little girl shown in the video is an actress, she is not Tom Hank's daughter. Hope you enjoy the video.
Is 4 too old for a toddler to suck on a pacifier? Check out little Suri Cruise. She goes from Little Diva with high heel shoes and a Starbuck drink one day to a toddler needing to suckle the next. I struggled with my grandson and whether he was too old to continue with his Nip Nip at age 2. I can't imagine him walking around at age 5 with a pacifier in his mouth. Anyway, we decided that we should wean him from the Nip Nip at 2.5 years. I'm happy that we did. Most doctors recommend that parents wean their children from the pacifier before they turn 1. Miss Suri will be turning 5 next month.
My grandson lived his Nip Nip. He used it to sooth himself often. We gradually switched to giving it to him at nap and bedtime only. We weaned him altogether when we moved him into his big boy bed. When I see children Suri's age breastfeeding and still using a pacifier, I wonder what's up with the parents. Is it laziness or just not wanting to hear their child cry if they wean them? Could it be that they can't tell their children no? Kinda like the parents who are suing McDonalds because their children want a Happy Meal and they have to tell them no, lol. Not being able to say no to your child is a problem in itself, and the problem is with the adult.
If Suri was attending public school, she would have to leave her pacifier home. If not, she would be a target for bullies or the butt of jokes by her schoolmates. Yes there are 5 year old bullies, but that's a conversation for another time. It's doubtful that school adminstrators would allow a 5 year old to bring a pacifier to school either. The fact that she will be privately tutored may be a reason why Katie Holmes and Tom Cruise don't see a need to wean her at this time.
Regardless of whether you're a star or not, some parenting skills are universal. When we lack the ability to tell our children no we aren't doing them any favors. Take a look at Paris Hilton and Nicole Richie before she matured and became a mother. Drew Berrymore was another troubled teen and I could go on, but I'm sure you understand where I'm coming from. Children need limits and guidance.I wonder what Katie Holmes' explanation would be if asked why she's allowing Suri to use a pacifier at age 5.

Do you remember Ronald McDonald and the cast of characters in McDonald Land? I loved the Hamburglar and Officer Big Mac. In recent years Ronald McDonald and his friends have made few appearances on TV or any of the McDonald's restaurants. It seems his character is a thing of the past except for his appearances relating to the Ronald McDonald House. With all the negative publicity about the fat grams in their food and mothers suing because their children want Happy Meals and they just can't tell them no, McDonald's have decided to place their focus on their coffee rather than their burgers.
It's rather sad that a cast of characters have been abandoned. I loved taking my daughter to play in McDonald Land Saturday afternoons when she was growing up. She ate a happy meal every Saturday, and she's healthy and happy. I find it rather disturbing that obesity is being blamed on corporations such as McDonald's when in fact the parents should take responsibility for their own inability to control their child's diet. I guess it's easier to point the finger at somebody else rather than look in the mirror and say I'm the problem. My parenting skills need some work.
It also saddens me because you can't find a McDonalds that has any of the characters incorporated into their playgrounds anymore. I would love for my grandson to see Officer Big Mac, Mayor McCheese, Grimace and the Fry Kids. Instead McDonald's is changing their marketing gimmicks to the more sophisticated consumer. They carry iPads and text what they have to say all hours of the day and night. They sip lattes, mochas, cappuccinos and espressos after clubbing or on their way to work and they're about 50 cents less a cup than Starbucks. They can use the drive through to get their favorite beverage and do it 24 hours a day.
I'm all for modern technology and change, but on the other hand I'm saddened to see something that used to make me happy placed on a shelf. I guess this is another instance of all good things must come to an end.
The ability to love unconditionally and to survive on little to no sleep, poopy diapers, upset tummies, tantrums, the same bedtime story over and over, the sacrifice of a new dress, turned down meals, a crowded bed, and the strength to get up the next day and do it over again with no complaints.
